I love a quick and easy dinner on a weeknight.  How many times can you eat leftovers, anyway?  The buttermilk makes this chicken soo moist.  The thyme adds a hint of flavor.  You could add more ingredients to spice it up, like pepper or parsley, but for the sake of time and sanity- this is more than enough.  The only thing you have to remember is to put the chicken in a bag the night before with the buttermilk and the sprigs of thyme but I think that’s easy enough.Enjoy!Love,

5-Ingredient Chicken

Yield: Serves 8

Lauren Torrisi's 5-ingredient chicken recipe.

Ingredients:

2 cups buttermilk
1 bunch thyme
1 1/2 cup panko breadcrumbs
1 teaspoon salt
8-10 slices provolone cheese
8 boneless, skinless chicken thighs

Directions:

The night before, put chicken and buttermilk in a resealable bag. Add thyme sprigs and let soak overnight.

When ready to eat, preheat the oven to 400 degrees. Place chicken on a rack and let the excess buttermilk drain off.

Mix together thyme leaves, panko breadcrumbs and salt. Dredge chicken in breadcrumbs and place on parchment lined sheet tray.

Bake in oven for 30 minutes or until juices run clear. Place slices of cheese on top of chicken and place back into the oven for another few minutes.

Serve warm with slices of lemon, tomatoes and salad.

*If you're gluten-free, try substituting almond flour or brown rice breadcrumbs in place of the panko.
